Dim Sum is characterised by elegant light cooking that preserves the natural quality of ingredients and Fook Lam Moon embraces this philosophy just like its flagship Hong Kong restaurants.
As we nibbled on shrimp dumplings, pan fried carrot cake, char siew buns and egg tarts, tea is a must in accompaniment with Fook Lam Moon's flowering tea an irreproachable choice. Clichéd as it may sound, I love watching the tea leaves unfurl into a bloom against the soaring views of the imperial palace and even Mt Fuji on a clear day.
Most certainly, Fook Lam Moon's reputation as dim sum purveyors is spot on.
