Fluffy Fukamachi...

Traditional Japanese restaurants are known for their almost fanatical mantra of sticking to basics and placing their entire focus on the food. Fukamachi is no exception as freshness of ingredients is the key here.

Red lacquer trays comprising of the tentsuya dipping sauce, grated daikon, sea salt and lemon wedges were set before us while the Chef started battering the shrimps, fish and vegetables before slipping then into the hot sesame oil. Changing the oil at short intervals, it remained crystal clear throughout and the fritters always came out fluffy and perfectly fried.

Once the light, crispy fritters were ready, they were presented one by one, golden and piping hot. The warm and crunchy exterior contrasted beautifully with the tender flesh encased within. I found the crackling shrimp head and the shrimp fritters especially pleasing. Accentuated with just a simple squeeze of the lemon and sea salt, the zesty tinge brought forth a burst of the fresh, sweet goodness of the sea. Heavenly!

My only grouse was the relatively small portions, even though we had the set menus:(
