The Simple Life...
Affordable sushi is a dime a dozen here in Tokyo but the quality at Kyosushi is what sets it apart from its counterparts. The restaurant with its spartan interior consists of just a long counter spanning the length of the restaurant and two other individual tables.
Although agreeing with my other half that we should beat the lunch crowd by heading there before noon, there was already a queue forming outside at ten to twelve. After a relatively short wait of 20 minutes, we were ushered to counter seats where the two skilled venerable chefs stood dissecting the day's catch from nearby Tsukiji market. Pieces of perfectly moulded rice with slivers of raw fish soon appeared, glistening from the sheer lustre that is only possible with the freshest from the ocean. The same due diligence was even applied to the humble Kappamaki as only one chef (we are guessing the apprentice sushi chef) was assigned to perform this monotonous task, rolling out perfectly balanced rolls of seaweed and rice throughout.
Before making our way out to make room for the fast snaking queue, we rounded our lunch off nicely with a bowl of homemade miso-based clam soup. Ahhh, the essence of the simple life...
